This meal is one of my absolute favorites to fix for my family any day of the week. Sheet pan meals are my absolute go-to during the week! They are so quick to get in the oven, you can get caught up on something else while it roasts in the oven, and the best part - QUICK and EASY clean up!
Sheet pan meals are my absolute go-to during the week!
Fish has become one of our favorite proteins to eat, plus it has super quick cook time! The basic combination of our go-to meal is fish + 2 veggies. This is a super healthy meal for cutting out so many carbs in your diet too!
Basic direction below.

Before you begin with the food, preheat your oven to 400 degrees, line your sheet pan/s with foil for even faster clean up, and spray foil with nonstick spray.
The fish:
Lay fish skin side down on foil
Drizzle with olive oil
Season up the fish this seasoning combo is salt, pepper, season salt, and a little cayenne
The Sweet Potato:
Wash and cut sweet potatoes cut potatoes in whatever shape desired: rounds, fries, etc.
Drizzle with olive oil or coconut oil
Season them up salt, pepper, and garlic powder (pictured) or salt. sugar, cinnamon, and orange zest
Mix potatoes up to make sure they are all coated
Spread in an even layer and bake
The Brussel Sprouts:
Wash and dry Brussel sprouts
Cut off core and remove outer spotted leaves
Cut sprouts in half (cut so each half has a cut off core)
Drizzle with olive oil
Season up the Brussel Sprouts I use salt, pepper, garlic powder, paprika, and cayenne
The paprika and cayenne are what really sets these Brussel sprouts apart from the traditional ones that no one enjoys. They crips up with the oven with a nice spice!
