The Easiest Flaky Southern Biscuits

Ingredients

4 cups all purpose flour

4 tsp baking powder

1/2 tsp baking soda

1 tsp salt

1 cup unsalted butter, shredded and chilled

1 cup + 2 tbls Buttermilk


Yields 12 biscuits


Steps

1. Preheat oven to 375 degrees & line baking sheet with parchment paper 2. Whisk flour, baking powder, baking soda, and salt in a large bowl

3. Cut in cold butter (freeze sticks of butter and shred; keep shredded butter in freezer until ready to use) - I just used my hand for this step and do a quick mix

4. Fold in buttermilk (you can sub in regular milk if needed)

5. Once a thick dough is formed turn out onto a floured surface and bring together with your hands

6. Pat out dough with floured hands until around 1 in thick & cut out biscuits (tip: do not twist cutter when punching out circles this will seal the edges and will not rise as successful)

7. Place biscuits on basking sheet and brush with melted butter or canola oil

8. Bake on top rack until tops are golden brown (around 20 minutes)


If you feel your butter in the biscuits has softened you can place the baking sheet in the refrigerator for a few minutes to firm the butter back up before baking, but if you work quick and keep your hand motions quick this shouldn’t be an issue.
