Chicken & dumplings
Serves 4 people
Ingredients
1 whole chicken (5lb)
3 whole carrots, washed not peeled
3 stalks celery
3 cups of water
Salt & pepper
2 1/4 cup Bisquick mix
2/3 cup water
Directions
Put carrots and celery in pot, put whole chicken on top of vegetables. Heavily Salt & pepper top of chicken and pour in 2 cups of water. Pressure cook 25-30 minutes on high. Quick release valve when finished until steam is gone and open insta pot.
Pull out chicken and vegetables. Transfer chicken broth to a pot on the stove and add remaining cup of water. Shred chicken (just use to your ratio preference) and add to broth and bring to a boil. Start dropping in your dumplings. Turn down Heat and simmer until dumplings are fully cooked about 15-20 minutes. Salt and pepper to taste and gently stir.
While chicken is cooking mix bisquick and water for dumplings and set to the side. Drop with a spoon or roll out and cut into strips.
Use left over chicken for chicken salad, buffalo chicken dip, and more!
